   Description

 

The ham called "Crudo di Cuneo", interested in a production area comprising the provinces of Cuneo, Asti and Turin's part of that (in the foothills of Pinerolo and Carmagnola) for a total of 54 municipalities.

The product specification are expected to be used only fresh pork legs, from traditional breeds of animals born, raised and slaughtered in the production area and fed largely with local cereals. With a minimum curing time of 10 months and weighing between 7 and 10 kg, the Raw Cuneo, protected from the homonymous Consortium, must ensure the traceability of the entire production chain.

The area has since ancient times linked to the history of pig farming and processing hams, with tracks dating back to 1600, thanks to the climate not too cold in winter and sweltering in summer, which gives the product features quality properties.
