"Priest"

Description |
The Priest is produced in different areas of Piedmont.
It is obtained from the rind or skin of the pork cut into strips, rolled and tied with string, covered with salt, pepper, sage, rosemary and spices.
Has a length of 18-20 cm, a diameter of 5-6 cm and a weight of 250-350 g.
It is eaten boiled.
