Bisecon

Description |
The "Bisecon" or "bisecun" is a traditional product of much of the region.
It 's a cooked sausage made from tripe (buseca ") and / or pork head chopped coarse, vegetable broth, salt, spices (cinnamon, nutmeg, cloves, black pepper), fried onions, sausage gut blind pig, cooked in boiling water, sold and eaten in slices.
INGREDIENTS
Tripe or pig head
Vegetable stock
Onion
Salt
Black pepper
Cinnamon
Cloves
Nutmeg
Natural gut: blind pig
STAGES OF PROCESS
Wash tripe and / or head
Placing vegetable broth
Boil until cooked
Spolatura and / or rough cut with a knife
Soffriggitura in onion
Adding the tanning
Blend until smooth paste
Bagging
Binding Manual
Puncture the gut
Placing in boiling water
Cook for 30 minutes.
