Description |
The salsiccia stufata (Sausage stew) is spread throughout the area, the processing of dried sausage (meat and liver) unfolds according to a precise ritual: the raw material is ground, mixed, stuffed into appropriate gut, and then subjected to steaming, drying and seasoning, which gives the dough a very special flavor.
