   Description

 

Prosciutto di Sauris is a savory smoked ham and aged for at least ten months in the town of Sauris obtained exclusively from fresh hams from pigs born, raised and slaughtered in the territory of certain Italian regions.

 

Upon completion of the curing ham Sauris shows whole bone. The outer surface is completely covered by the rind of solid walnut with golden-orange tones except the domestic side, originally the subject of dissection.

 

The visible part is thin, dark red, outlined in white in the visible portion. The consistency is firm and elastic, even in the vertical section of the cut. The ham bone was Sauris IGP entire weight of not less than 7.5 kilograms.


Can be sold on the bone, boneless or boned and cut into slices, and sliced and mixed. Sauris Ham IGP has cut the red-pink color of lean, with fat divided into the portion read veins and internal rate of device generally placed between the thin rind.


Fat is snow white or pinkish-white. The perfume is delicate and the taste is sweet, with a polite note of smoke. This ham has obtained the IGP denomination with a national decree of 21.12.2005.
